Mediterranean Inspired Sheet Pan Meal

Ingredients

  • Chicken Sausage optional*
  • 1 Shallot diced
  • Handful cherry tomatoes
  • Handful marinated artichoke hearts
  • 1 can black olives
  • 1 can/1.5 cups cooked chickpeas drained
  • 3 cloves garlic smashed
  • 1 sweet bell pepper chopped
  • 1 block feta ¼“ slices
  • Olive oil
  • Salt
  • Oregano
  • Thyme
  • Basil

Instructions

  • Preheat oven to 425.
  • Toss together all ingredients except feta on a sheet pan (line with parchment paper for easier clean up). Top with feta slices. Drizzle with additional olive oil. Roast until tomatoes are bursting and feta begins to brown, 20-30 minutes.

Notes

*I used Jones Dairy Farm chicken sausage links from Costco. Sliced into ½” thick pieces.
