Preheat oven to 350. Line two baking sheets with parchment paper.
To a food processor (or large mixing bowl), add oats, nuts, hemp hearts, pumpkin seeds, salt, cocoa powder and espresso powder, if using. Pulse/stir to combine. Drizzle over coconut oil and maple syrup. Pulse until incorporated. Press into baking sheets. Sprinkle with coconut.
Bake in preheated oven for 20 minutes, or until fragrant. If coconut browns before granola finishes cooking, stir granola and continue baking.
Turn off oven and leave granola to cool in oven with door slightly ajar. Granola will harden as it cools.
Break into pieces, stir in chocolate chips, and store in airtight container.
