Baked Feta Bruschetta

A delicious twist on the viral TikTok pasta. Creamy feta, blackened tomatoes and roasted garlic smeared on sourdough.

Ingredients

  • 5 campari tomatoes or 2 cups cherry tomatoes
  • 1 block feta cheese
  • 1 bulb garlic
  • Fresh herbs like oregano and thyme
  • Olive oil
  • Salt and pepper to taste
  • Fresh basil for serving

Instructions

  • Preheat oven to 450.
  • In an oven safe dish, place block of feta. Break garlic into cloves (no need to peel). Nestle tomatoes, garlic and herbs around the block of feta.
  • Sprinkle with salt and pepper. Drizzle everything with olive oil, making especially sure that the garlic cloves are coated.
  • Bake in preheated oven for 20 minutes or until feta begins to turn golden brown and tomatoes are beginning to burst.
  • Remove from oven. Remove stems from tomatoes, if there were any. Use a fork to push roasted garlic out of peel. Discard peels. Stir everything together, crushing tomatoes and creaming feta.
  • Toss with pasta or smear on top of bread. Top with fresh basil and enjoy.
