This easy sheet pan meal is super nutrient dense. The Mediterranean diet is touted as healthy for good reason! Packed with healthy fats, complete sources of protein, and veggies, this meal combines all your nutrient needs into one sheet pan.

This recipe is made with very simple ingredients that you probably already have on hand. Simply throw them all together for a healthy, nutritious meal.
What You’ll Need
Here’s what you’ll need to whip up this yummy recipe:
- Chicken Sausage: Optional. If you’re avoiding meat you can skip this, as chickpeas have protein! You can also substitute another type of sausage, chicken breast, or fish.
- Shallot: Can be replaced with half an onion if you prefer.
- Cherry tomatoes: You can substitute with any type of tomato you have on hand!
- Marinated artichoke hearts: I love the ones sold at Costco.
- Black olives: Can be replaced with green olives if you prefer!
- Chickpeas: I like to cook my own chickpeas. It’s not as effortless as using a can of beans, but cooking your own legumes will save you tons of money. Plus, it’s healthier. Most conventional canned goods are lined with resins like BPA to prevent the can from rusting.
- Garlic cloves: Smash them and remove the peel.
- Bell pepper: Any color! Whichever is your favourite.
- Feta: I used the whole block and sliced it into 1/4″ pieces. You can also use crumbled feta.
- Olive oil: Can replace with coconut or avocado oil.
- Spices: Salt, pepper,oregano, thyme and basil are my choices for this recipe.
Feel free to omit any of the ingredients you don’t like, or add in extra ingredients you love. Diced potatoes or zucchini would be great in this recipe! Don’t be afraid to customize recipes to your family’s liking.
Mediterranean Inspired Sheet Pan Meal
Ingredients
- Chicken Sausage optional*
- 1 Shallot diced
- Handful cherry tomatoes
- Handful marinated artichoke hearts
- 1 can black olives
- 1 can/1.5 cups cooked chickpeas drained
- 3 cloves garlic smashed
- 1 sweet bell pepper chopped
- 1 block feta ¼“ slices
- Olive oil
- Salt
- Oregano
- Thyme
- Basil
Instructions
- Preheat oven to 425.
- Toss together all ingredients except feta on a sheet pan (line with parchment paper for easier clean up). Top with feta slices. Drizzle with additional olive oil. Roast until tomatoes are bursting and feta begins to brown, 20-30 minutes.
Notes
My favourite sheet pans are stainless steel with no nonstick coating, like these. Aluminum is not good to consume, and the majority of the non-stick cookie sheets are coated in toxic chemicals that flake into your food when scratched. Bare stainless steel is the safest, lightest option I’ve found.
