A variation of this baked feta recipe went viral in 2020 (just search “tiktok pasta” and you’ll see what I mean) and I’ve been making it ever since.
This is my twist on the viral recipe. Though most commonly tossed with pasta, my family loves it in Bruschetta form. Roasted garlic, feta, and tomatoes are delicious spread over a slice of sourdough and topped with fresh basil. It’s in our regular meal rotation.
Baked Feta Tomato Bruschetta is also a crowd pleaser as an appetizer at gatherings. It only requires about 5 minutes of active work. The rest of the magic happens in the oven.
Even tomato haters love this recipe. You have to try it.
TikTok Trend:
- Quick & Easy: Ready in just 30 minutes, perfect for busy weeknights.
- High Protein: An easy way to meet your protein goals, with meat as the focus of your meal. Add a fried egg (Milanesa a Caballo) for added protein.
- Healthy: These milanesas are baked rather than fried, making them healthier.
- Simple Ingredients: Made with everyday pantry staples.
- Versatile: Customize it with your favorite herbs, spices, and toppings.
Tips for the Perfect Bruschetta:
- Bread Selection: Sourdough is my favourite bread selection for its delightfully tangy flavour and higher nutrient content than other breads. Rustic Italian loaf or a classic French baguette are also great options. If you like a little crunch, toast your slices in the toaster before spreading with the feta mixture.
- Tomato Variations: Small tomatoes tend to work best for this recipe because they roast more quickly and evenly. If all you have are heirloom tomatoes or a classic beefsteak, slice into smaller pieces before roasting. I usually use campari or cherry tomatoes for this recipe. Campari tends to result in a slightly more liquidy mixture.
- Herb Variety: You can adapt the herbs you use depending on your preferences. I love thyme and oregano, but you can experiment with rosemary, lavender, dill, or anything that sounds yummy. Fresh herbs are best, but a dried herb blend like herbs de Provence or Italian seasoning also works great.
More Flavour Possibilities:
- Spice it up: Add red pepper flakes or a pinch of chili powder to the roasting dish for a touch of heat.
- Balsamic Glaze: Drizzle a balsamic glaze over the finished bruschetta for a sweet and tangy contrast.
- Honey: For a sweet and savory combination, drizzle honey over the bruschetta just before serving.
- Go Classic: Toss the baked feta and tomatoes with pasta for a hearty meal
- Game Day Ready: Serve as a dip with crackers, veggies and slices of bread
Serving Suggestions:
- Presentation: This looks impressive served on a wooden board. I like to slice the bread into thirds for easier grabbing. Top with fresh basil and drizzle with balsamic glaze or honey, if desired.
- Pairing Ideas: This bruschetta pairs beautifully with a chilled white wine in summer or a full bodied red in winter.
