Tarta de Queso. Basically a giant cheese filled pastry.

Buttery, flaky pie crust, ooey gooey cheese and a sprinkle of sugar: a match made in Heaven. It’s a few simple ingredients, easy to make, and delicious. What’s not to love?
Tarta de Queso, What You’ll Need:

Crust
- ½-¾ cup sourdough discard cold, stirred down
- ¾ cup flour
- 5 Tbsp butter, cold + cubed
- ½ tsp salt
- ½ tsp sugar + more for sprinkling
Filling
- 2 cups melting cheese (oaxaca or similar)

The Crust:
If you don’t have a sourdough starter or you’re all out of discard, you can use your favourite pie crust recipe instead. If you don’t have a sourdough starter, I highly recommend you start one! It makes all your baked goods more nutritious and easier to digest. (Pro tip: before you try to make one, ask your friends if anyone has a starter they can share.)
The Filling:
The filling for this savory turnover is simply cheese. In Argentina, it is traditionally filled with queso cremoso. The closest approximation I have found is oaxaca, a Mexican melting cheese. If that’s not available where you are, you can use a low moisture mozzarella. Fresh is ideal, but in a pinch you can use shredded.

Tarta de Queso
Ingredients
Crust
- ½-¾ cup stirred sourdough discard cold stirred down
- ¾ cup flour ~105g
- 6 Tbsp butter cold, cubed
- ½ tsp salt
- ½ tsp sugar
Filling
- 2 cups melting cheese oaxaca or similar*
Instructions
- In a food processor, pulse together flour, salt and sugar. Add butter and pulse until combined (you should still see pea sized pieces of butter). Start with ½ cup of sourdough discard. Pour over flour mixture and pulse until dough comes together. If dough isn't coming together, add more discard until it does. Press dough into a disc, cover and refrigerate for at least one hour.
- Dice cheese into 1 inch cubes.
- Preheat oven to 375. Atop a silicone baking mat or parchment paper, roll dough into a large circle. Pile cheese on half of the circle. Fold the dough over top and seal the edge with a fork. Sprinkle with sugar.
- Bake for 30 minutes, or until golden brown.
