Sweet summer bruschetta is a crowd pleaser at gatherings that only requires about 5 minutes of active work. The magic comes from the fresh summer produce.

Tips for the Perfect Bruschetta:
- Bread Selection: Sourdough is my favourite bread selection for its delightfully tangy flavour and higher nutrient content than other breads. Rustic Italian loaf or a classic French baguette are also great options. Since this bruschetta is on the runnier side, its best served on hard, toasted bread.
- Tomato Variations: I used cherry tomatoes for this recipe, but any variety will work. Just dice evenly. If your tomato is on the watery side, drain some of the excess liquid before adding the remainder of your ingredients.
- Herb Variety: You can adapt the herbs you use depending on what you have on hand. I love basil for a classic bruschetta, but you can experiment with rosemary, oregano, thyme, or anything that sounds yummy. Fresh herbs are best, but a dried herb blend like herbs de Provence or Italian seasoning can be substituted in a pinch.
More Flavour Possibilities:
- Spice it up: Add red pepper flakes or a pinch of chili powder.
- Go garlic: Mix in roasted or grated garlic to add complexity.
- Caprese: Serve with slices of mozzarella.

Sweet Balsalmic Tomato Bruschetta
Ingredients
- 2 cups Cherry Tomatoes
- 1 bunch Fresh Basil
- Olive oil
- Balsamic Vinegar
- Honey
- Sea Salt
- Black Pepper
- Hard Toasted Bread (Italian, French or Sourdough work well)
Instructions
- Dice tomatoes. Slice basil. Place in a bowl and drizzle with olive oil, honey and balsamic vinegar. Sprinkle with salt and pepper, to taste. Stir to combine. Serve with crusty toasted bread.
