Ever make a batch of quick bread and get sick of it halfway through the first loaf? You already cut into it so it’s not really gift-able anymore. Sure, you can always freeze it. Quick bread tends to freeze well.
However, if you’re anything like my family, you’ll unearth it at the back of the freezer a year later and end up throwing it away.
The solution?
Make different kinds of bread with the same batter! Transform one basic batter into a variety of mini loaves, each with unique flavours and textures.
This is one of my favourite ways to get creative in the kitchen.
Grab your mini loaf pan. Start with a basic recipe (think banana, zucchini, or pumpkin bread).
Mix up the batter for the base recipe and pour ¼ of it into one of your mini loaf pans. Then add something else to the batter, like nuts or chocolate chips. Pour into one of your mini loaf pans. Then add something else to your batter, like cocoa powder for a double chocolate loaf.
If you run out of mix-ins to add to your batter, you can also add things on top of your loaf or as a layer inside. Some ideas: a layer of cinnamon sugar cream cheese, a cinnamon crunch topping, or a sweet glaze once they come out of the oven.
Flavour Inspiration by Bread Type
A quick guide to inspire your mini loaf masterpieces:
Banana Bread: Think nuts, cream cheese layers, chocolate chips, cocoa powder variations, or a decadent cream cheese frosting.
Zucchini Bread: This versatile bread pairs well with nuts, chocolate chips, cocoa powder, or a cream cheese frosting.
Pumpkin Bread: Go crazy with nuts, a cinnamon cream cheese layer, chocolate chips, crumble or oatmeal toppings, a maple glaze, or a classic cream cheese frosting.
Fruit Bread (Lemon, Strawberry, Blueberry, Apple): Elevate these loaves with a layer of jam or lemon curd, extra fruit pieces within the batter, a few teaspoons of poppy seeds, or a delightful citrus-y glaze.
Bonus: mini loaves are the perfect size for sharing! Drop one off at your neighbor’s house or take one to a friend.
