Ragu
There’s nothing more comforting than a bowl of warm, homemade ragu. This is a great recipe to start with. Just skip the initial instructions that involve cooking the beef. The hardest part is already done. 😉 It’s a delicious, hearty way to use up leftover pot roast.
Sliders
Mini sandwiches with tender beef and melty cheese. Need I say more? Slice up your beef. Buy some slider buns, or make your own dinner rolls (favourite yeast recipe/fav sourdough recipe). Whip up a quick beer cheese sauce or simply serve with slices of cheese. This is a great family style dinner.
Soup
Don’t let anything go to waste! Serve the leftover broth from cooking the pot roast as a light soup. I love to include any leftover onions, potatoes and carrots from my pot roast. It has great flavour as is, just warm it up briefly and serve as an appetizer. If you’d like to make it into a meal, add additional veggies and dice up leftover roast for a hearty stew.
Alternatively, make an entirely new soup and throw your leftover beef in to use it up. Vegetable soup is a great option. This leftover roast beef and wild rice soup also looks like comfort food heaven.
Sandwiches
Who doesn’t love a good sandwich? Make a French dip inspired sandwich. Slice your beef thin, place on a baguette, and top with provolone cheese. Broil in your oven for a few minutes until the cheese is melted. Serve with some of the leftover pot roast broth for dipping!
Loaded Nachos
Preheat oven to 425. Line a sheet pan with parchment paper. Spread with tortilla chips. Top with cheese, shredded leftover pot roast, olives, jalapenos, corn, and any other toppings you love. Drizzle with BBQ. Bake until the cheese melts, 8-10 minutes. Top with pickled onions, cilantro, and any other topping that shouldn’t be baked (think lettuce, herbs). Best eaten as soon as they come out as they tend to get soggy.
Empanadas
Shred leftover beef. Stuff empanadas with beef and any onions leftover from your roast. You can find Goya empanada shells in most groceries. Or, make your own.
Stuffed Peppers
Make Philly cheese steak inspired peppers. Dice or shred beef. Caramelize onions or use leftovers from the roast. Combine beef, onions, garlic powder and a bit of mayo. Stuff in parboiled peppers. Top with shredded cheese. Bake until warmed through and cheese is melted, 15 minutes.
Enchiladas
Use leftover beef in place of the protein in your favorite enchilada recipe.
Loaded Baked Potatoes
Bake potatoes. Slice open and top with shredded beef, cheese, sour cream, green onions and anything else that sounds good to you. I love adding some crispy bacon.
